Ingredients
  1. 8 ounces White Flour
Method
  1. Sift together flour, cream of tartar, baking powder and salt.
  2. Rub in butter.
  3. Make a well in the middle of the mixture and pour in the buttermilk.
  4. Cut together with a knife until doughy.
  5. Knead three times on a floured board to smooth underside.
  6. Turn upside down and roll to a uniform 1/2 inch thick.
  7. Cut dough into 2+ inch circles with floured cutter.
  8. Dust tops generously with flour, place on uncreased cookie sheet and bake at 425F for 10-12 minutes until brown.
  9. Move from cookie sheet and let cool.
  10. Spread on strawberry jam first then add heaping teaspoon of clotted cream on top.Serve with piping hot tea.
