This recipe can be serve by Three Persons
Ingredients
  1. 1/4 lb. vegetable oil
  2. 6 lbs. lean beef coarsely cubed
  3. 1 cup chili powder
  4. 2 Tbsp cumin seeds crushed
  5. 2 Tbsp oregano
  6. 2 Tbsp salt
  7. 1 - 2 Tbsp cayenne pepper
  8. 4 cloves garlic minced
  9. 2 qts. beef stock
  10. 1/2 cup masa harina
  11. 1/2 cup cold water
Method
  1. Fry suet until crisp.
  2. Then add beef, about 1 lb at a time, and brown, stirring as it cooks.
  3. Remove each pound after browning.
  4. When all meat is browned, return it to kettle and add seasonings and beef stock or broth.
  5. Cover and simmer 2 hrs. Skim off fat.
  6. Combine mas or cornmeal and water and stir thoroughly into chili.
  7. Simmer 30 min.
