Ingredients
  1. 2 tbsp vegetable oil
  2. 1-1/2 cups onion chopped
  3. 2 tsp garlic minced
  4. 1/3 cup cider vinegar
  5. 1 cup packed brown sugar
  6. 3 tbsp lime juice
  7. 1 tbsp gingerroot minced
  8. 3/4 tsp nutmeg ground
  9. 3/4 tsp dry mustard
  10. 5 cups papayas peeled, seeded, and finely chopped
  11. 2/3 cups raisins
Method
  1. In an 8-quart sauce spot heat oil; saute onion and garlic for 3 minutes.
  2. Stir in vinegar, brown sugar, lime juice, ginger, nutmeg, and dry mustard until well mixed.
  3. Stir in chopped papaya and raisins; simmer for 2 minutes, stirring frequently.
  4. Remove from heat and cool. Chill for at least 1 hour before serving to allow flavors to blend. Refrigerate leftovers.
