Ingredients
  1. 75g Sugar
  2. 75g Ground Almonds
  3. 1 Pinch Cinnamon
  4. 5g Vanilla
  5. 70g Butter
  6. 3 Egg
  7. 60g Caster Sugar
  8. 125g Flour
  9. 1 Lemon
  10. 20g Cocoa Powder
  11. 50g Butter
  12. 100g Raspberry Jam
Method
  1. Make the pastry by sieving flour into a bowl and adding sugar, butter and the egg. Mix thoroughly, working fat in with fingers.
  2. Add the vanilla and cinnamon, roll into a ball and leave to rest in the fridge.
  3. Make the filling :
  4. Put the sugar, almonds, lemon zest and juice, chocolate egg yolk and 2 egg whites in a bowl and stir.
  5. Heat over boiling water for 5 minutes, until the sugar dissolves, string constantly. Leave to settle once dissolved.
  6. Roll out pastry and line a greased flan dish, saving surplus pastry.
  7. Pour in the filling mixture and allow to cool.
  8. Spread the jam on top with a spatula.
  9. With the remaining pastry, make long strips and lie on top of tart in a criss-cross pattern.
  10. Brush with egg yolk to brown.
  11. Put in the oven for 30 minutes at 350°F (180°C).
  12. Serve with hot chocolate or coffee.
