Ingredients
  1. 4 medium onions, sliced
  2. 5 big lemons seeded and chopped up
  3. 1 ounce salt
  4. 1 pint apple cider vinegar
  5. 1 ounce mustard seeds
  6. 1/4 pound seedless raisins
  7. 1 scant teaspoon allspice ground
  8. 1 pound sugar
  9. Dash mace
  10. 1 or 2 black peppercorns cracked
  11. Pinch of coriander cracked
Method
  1. Sprinkle salt over the onions and lemons and leave for 12 hours.
  2. Add remaining ingredients, bring to boil, then simmer on very low fire for about 45 minutes.
  3. Put into sterilized jars and seal when cold.
  4. Serve with leftover beef or mutton or ham, or as a side dish to anything curried.
