Ingredients
  1. 2 pounds kiwifruit peeled and sliced
  2. 2 bananas peeled and chopped
  3. 3 sweet onions chopped fine
  4. 1 zest of lemon Grated
  5. 3 Juice of lemons
  6. 1 cup raisins
  7. 1 cup brown sugar packed
  8. 1 teaspoon ginger ground
  9. 1/2 teaspoon cayenne pepper
  10. 1/2 teaspoon allspice ground
  11. 1/2 teaspoon nutmeg freshly ground
  12. 1/4 teaspoon cardamom ground
  13. 1 Tablespoon kosher salt
  14. 1 cup white vinegar
Method
  1. Place kiwifruit, bananas, sweet onions, lemon zest, lemon juice, raisins, brown sugar, ginger, cayenne pepper, allspice, nutmeg, cardamom, salt, and white vinegar into a heavy saucepan.
  2. Bring to a boil, lower heat, and simmer uncovered about 1 hour until thickened.
  3. Pour into dry, sterilized canning jars and process according to manufacturer's directions.
