Ingredients
  1. 450g Sugar
  2. 300ml Water
  3. 160g Dried Apricots
  4. 150ml Water Warm
  5. 50g Gelatine
  6. 2 tsp Lemon Juice
  7. 1 cup Caster Sugar
Method
  1. Soak the apricots in water for 12 hours.
  2. Place the apricots and 300ml water in a saucepan and cook until soft.
  3. Liquidize or pass through a sieve to produce about 300ml of pure
  4. Return the pure to the saucepan, add the sugar and heat gently until the sugar is fully dissolved.
  5. Place the gelatin and warm water in a bowl over a saucepan of hot water, stir until dissolved.
  6. Mix the dissolved gelatin with the apricot mixture, stirring thoroughly.
  7. Strain the mixture into a slightly chilled 18cm (7 inch) baking tray.
  8. Leave in a cool place to set for 8 - 12 hours.
  9. Cut into squares using a hot, dry knife.
  10. Sieve the caster sugar, roll each of the jujubes in the sugar and place in sweet cases.
  11. Should be eaten reasonably quickly as they do not keep well.
