Ingredients
  1. 2 pounds green tomatoes chopped
  2. 2 pounds tart apples peeled and chopped
  3. 1/2 pound onions chopped
  4. 1 pound raisins
  5. 3-3/4 cups light brown sugar
  6. 2 tsp ginge ground
  7. 2 tsp black peppercorns crushed
  8. 2 tsp four spices
  9. 2 tbsp salt coarse
  10. 2 garlic cloves
  11. 3 cups wine vinegar
Method
  1. Combine all the ingredients, except the vinegar, in a stainless-steel saucepan.
  2. Add 6 tbsp of the vinegar and cook over low heat, adding the remaining vinegar gradually as the mixture boils.
  3. Stir as the mixture thickens about 45 minutes. When thick, transfer to sterilized jars.
  4. Seal when cool. Store in a cool, dark place.
