Ingredients
  1. 1 1/2 cup Chicken breast
  2. 1/4 cup Peas
  3. 1/4 cup Carrot julienned
  4. 1/8 ts Celery seed
  5. 1 tb Golden raisins
  6. 1 cup Red cabbage shredded
  7. 1/4 cup Green apples chopped
  8. 1/4 cup Scallion chopped
  9. 1/2 cup Celery peeled and sliced
  10. 1 cup Nonfat yogurt
  11. 1 tb Nonfat mayonnaise
  12. 3 ts Curry powder
  13. 1 tb Dijon mustard
  14. 1 tb Parsley
  15. 4 lg Red cabbage leaves
Method
  1. Combine the chicken, peas, carrot, celery seed, raisins, shredded cabbage, apple,scallions, and celery in a salad bowl.
  2. Put the nonfat yogurt, mayonnaise, curry powder, lemon juice, black pepper, Dijon mustard, and minced shallot in a small bowl and whisk to blend.
  3. Pour the dressing over the salad and toss well. Cover and refrigerate for hour.
  4. Place a cabbage leaf, curved side down, on each salad plate. Mound salad into the leaves and garnish with the cherry tomato and parsley.
