Almond and Apricot Tart

Ingredients
- 250g Flour
- 200g Melted Butter
- 60g Sugar
- 2 Egg Yolks
- 1 Pinch Salt
- 1kg Apricots
- 50g Sugar
- 50g Butter
- 75g Ground Almonds
- 1 Egg
- 300g Whole Almonds
- 3 Tabelspoons Lavender Ho
Method
- To make pastry:
- Mix all ingredients together, then roll into a ball.
- Leave to chill for at least an hour.
- Roll out, then line a greased flan dish.
- To make filling:
- Mix sugar, butter, egg and ground almonds together.
- Spread mixture onto flan.
- Remove stones from apricots, cut in half and arrange on flan.
- Arrange whole almonds amongst apricots.
- Bake for 10 minutes at 280F. then for 40 minutes at 200F.
- After 30 minutes, gently heat honey. Once tart has been taken out of the oven, drizzle over top and caramelize under the grill.
