Ingredients
  1. 250g Flour
  2. 200g Melted Butter
  3. 60g Sugar
  4. 2 Egg Yolks
  5. 1 Pinch Salt
  6. 1kg Apricots
  7. 50g Sugar
  8. 50g Butter
  9. 75g Ground Almonds
  10. 1 Egg
  11. 300g Whole Almonds
  12. 3 Tabelspoons Lavender Ho
Method
  1. To make pastry:
  2. Mix all ingredients together, then roll into a ball.
  3. Leave to chill for at least an hour.
  4. Roll out, then line a greased flan dish.
  5. To make filling:
  6. Mix sugar, butter, egg and ground almonds together.
  7. Spread mixture onto flan.
  8. Remove stones from apricots, cut in half and arrange on flan.
  9. Arrange whole almonds amongst apricots.
  10. Bake for 10 minutes at 280F. then for 40 minutes at 200F.
  11. After 30 minutes, gently heat honey. Once tart has been taken out of the oven, drizzle over top and caramelize under the grill.
